The Process : 

Freshly harvested cherries are sealed in oxygen-free tanks, where fermentation builds under natural carbon dioxide pressure instead of oxygen. This slower, pressurized process concentrates the cherry's natural sugars and acids, developing an unusually bold, fruit-forward cup before the coffee is dried.
